Not just my “lucky day”

So, I found out this morning when I got to work, that yesterday wasn’t just my lucky day.  It was my coworker’s as well.

He came over to see me right away this morning.  I was glad, because I was going to go look for him and see how his court appointment went.

So, he tells me that after I left, he got called into the Prosecutor’s office.  The Prosecutor said to him, “Do you know that lady?”  Of course, he meant me because when I came out apparently he heard me talking with him.  I’m not sure if you are supposed to talk or not, once you leave the courtroom but of course my coworker wanted to know what happened.  So, I talked to him a few minutes, then said goodbye.

My coworker said, “Yes, I know her.”  The Prosecutor said, “is that your girlfriend?”  He said, “No, she is a coworker.” The prosecutor said to him, “You’re dismissed.” WOW!! Can you believe that?  It was my lucky day, and then his lucky day because he knew me! 😉

I told him he can pay me back…I like diet coke, decaf coffees, etc.  HeHe.

Chocolate Protein “Brownie”

So, I decided the chocolate protein bars definitely taste more like brownies.  I just had the most fabulous snack.  My protein brownie with vanilla greek yogurt frosting and blueberries!

Good Monday afternoon!

How was your weekend?

Mine was good, it was very busy as usual. Last night, we celebrated my dear sister’s birthday! I can’t believe my baby sister is 26! Her lil’  shin-dig was full of family, fun and FOOD. My favorite was the raspberry cake!

It was so pretty, I felt bad even cutting it let alone eating it!

Lunch

After last night’s evening of cake and ice cream, I wanted needed a healthy lunch.

I went to a quaint lil Mongolian BBQ style place and made up a healthy bowl of chicken, turkey, veggies, and brown rice. 🙂

It hit the spot and I have oodles of leftovers to last me through tomorrow’s (or maybe even Wednesday’s) lunch!

The Great Cookie Mystery

I got an email forwarded to me today about a lady who paid $250 for a Neiman Marcus cookie recipe.  Supposedly she asked the waitress for the recipe, and the waitress told her it was “two fifty”. The lady, of course, thought it was only $2.50 so she told the waitress to add it to her bill.   When she got her credit card statement later in the mail, she then saw the charge for $250.  She tried to fight Neiman Marcus on this, and they would not refund her money due to her already “seeing” the recipe.  Because she was so mad that they “over charged her” she wants to get this recipe out to everyone in the world with an email address.

Well, I am assuming this is not a true story.   I looked into it, and according to snopes, this email is False.

However, the cookie recipe did look yummy, so regardless of where it came from (it is a mystery), I thought I would share it with you all today.

Supposed Neiman Marcus Cookie Recipe

2 cups butter
24 oz chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 ts p. salt
2 cups sugar
18 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)

Measure oatmeal, and blend in a blender to a fine powder. Cream
the butter and both sugars. Add eggs and vanilla, mix together with
flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar, and nuts. Roll into balls, and place two inches apart on a cookie sheet.

Bake for 10 minutes at 375 degrees. Makes 112 cookies

Dinner last night at the Olive Garden was Apricot Chicken with green beans and asparagus.  Healthy right?!

Too bad Good thing I ended the meal with a big slice of birthday cake; “Death by Chocolate”. Oh man, was it goooood!!

I will try to get back to “good eating habits” today. Gosh, once you get off track, it’s so hard to go back on.

Not to mention my sister’s birthday is coming up next week, so it will be another “birthday cake bonanza blitz” (hehe) on Sunday! 😉

Liebster Award!

Last night, some friends and I went to see Need To Breathe in concert. It was good; different then what I expected, but good. I had only heard a few of their songs and I thought they were known as a “Christian” band, but they are more just “Rock.” To me they sounded like a cross between Kid Rock and Cold Play.

We found a spot with a ledge near the back of the theater, right in front of the lights and sound booth. It was a good spot, but the sound dude was burning incense and it was making us a little sick. It was fun nonetheless…

Due to getting home so late, and going to bed at 1 a.m., I skipped my morning cardio session.

Yesterday’s Workout

Speaking of working out, yesterday morning I went to the fitness center to get my elliptical on, and the security alarm was going off. It was blaring seriously loud! Needless to say, I did not stay to work out. 😦 I went home and did some arm weights.

My routine was:

3 Sets of 15 Reps
Shoulder Press (on medicine ball)
Shoulder Flys (on medicine ball)
Laying down triceps’ extensions

1 Min Rest

Standing Shoulder Press

Monday Jeans

Happy Monday!

I hope you all had a nice weekend. I did, but I am SO tired today.  So tired that I slept in and didn’t do my cardio this morning.  I don’t know if it’s because the weather has turned chilly again, (BOO!) but I feel like I could just close my eyes and sleep for hours!  I better work up some energy somehow.  Still much of the day ahead, and boot camp in 5 hours.  I also better put some extra effort in since I missed my cardio!  Right now I don’t even think I could do one lunge if I tried.  Ugh.  Hopefully my decaf caribou and dark chocolate square can wake me up.

Jean Size

So as the kind guy behind the counter was filling up my coffee, I happen to notice his jean size; 36-34 to be exact.  Kind of made me laugh.  Not because that is a bad size, but because I know his size.  How sad is that… I mean seriously! A complete stranger should not know these things right?!?  Thank goodness my jeans do not have the size printed on the back.  I wonder who the genius at Levi’s is that came up with that idea anyway.  Oh well….

I guess I should head back to the office soon.

Sorry my post is lame today.  I am just too tired… and perhaps a bit slap happy! 🙂

Transmission – FAIL !

I got some bad news yesterday. Apparently, my car needs a new transmission; or so the dealership says. The good thing is, this is covered under factory warranty (2 yr old Hyundai, only 36k miles). The bad thing is, they want to put a re-manufactured transmission in. That just makes me mad.

First off, there is no reason for a transmission to go bad on a practically brand new car. Second of all, if it does, and it is under factory warranty (not to mention I had purchased the extended bumper to bumper warranty), then why are they giving me a refurbished one? I mean, what?… will I be driving around with a transmission that had already had 5o, 60, 70 thousand miles on it? Grrrrr!!!!

Maybe I just have really bad “transmission luck.” After my transmission died two years ago on my 1999 A4 Audi Quattro (loved that car), I decided to get something brand new, reliable, and known for good quality. Hyundai had great reports, awesome warranty, and fit the “german styling” that I liked.

I mean, I was thoroughly bummed when my trans died on my Audi, but that had 168k miles on it (much easier to accept then on a car with 36k miles). I tried to fix it at the time, and the repair shop put in a used transmission, and it was an epic fail. Even after they replaced it, I was dealing with major issues, failures, leaks, etc. for three months. The last straw was when it crapped out on me on a major highway. Talk about scary! Finally, I demanded my money back (it was a pretty penny… let me tell you), and sold it with the bad trans, and jumped into the Hyundai.

Sooooo… here I am, in the new car… dealing with this again. Do I have like some “transmission curse” or something? 😦

I think I am going to go car shopping today, just for fun. Keep my options open. I kinda want to trade the car in now just to spite them. I don’t know, am I out of line? Do these things just happen? Should I be satisfied with the “transmission replace” even though it’s re-manufactured?

No Workout

Despite the fact that it would be nice to pound out my frustrations, I actually skipped my workout this morning. I was debating, but you know I’ve been doing twice a day for a week now (mornings cardio, evenings boot camp/training) and I felt it would probably be a good to take a day off.

Why is it so hard to take a day off? Ha. Most people would probably enjoy skipping a day, but I literally had to hold myself back from heading to the fitness center this morning. I’m even half thinking about going to boot camp at 10:oo a.m. But…. I did boot camp last night so two in less than 24 hours is probably not so good.

Oh well, I will enjoy my free morning. 😉

Penny & Posy

I think Pen and Pos are happy that I am actually home chilling this morning. Normally, I’m on the go so much. When I am home, they get, what I call “desperate for attention batensions.” I know, weird. I like to make up words! 😉

Posy has decided lay down next to me… on my table!

Intelligence Perception Gets “Hairy”

Happy Monday!

What a fabulous weekend I had (despite being majorly stuffed up still from this cold). The weather was gorgeous, as it has been lately. I am surprised that this warm streak has not left us yet, but I am so glad it hasn’t!  Now if it would just stay like this through November, I’d be happy! 😉

Saturday morning’s boot camp class was a bit brutal. I was still pretty sore from my training session Thursday so had to cop-out a little bit during the “speed abs.” I hate having to back off and not finish, but my abs absolutely refused to continue on in the fun!

Saturday night my family and I met some friends for dinner at Aubree’s. I had never been there before and gosh, was it good! They have a really great Harvest Salad. Hit the spot!

Sunday

Yesterday was communion at church. My pastor gave a great message on the Lord’s Supper and Christ defeating death. It was so awesome to be reminded that the grave is not our final destination. We have a hope and a future!

Last night I had some friends over for a pool night (don’t worry, it’s an indoor pool) and Mary Kay facials! We had a blast. Some days, girl time is just what you need.

I made raspberry-dark chocolate crepes for dessert. They were a hit!

Healthy Whole Wheat Crepes

Ingredients

    • 1 cup whole wheat flour
    • 4 egg whites
    • 1 cup almond milk (or any milk of your choosing)
    • pinch of salt
    • 3 stevia packets
    • 2 tablespoons unsweetened applesauce
    • 1 teaspoon vanilla extract

Directions

  1. Whisk together flour, egg whites, milk, salt, stevia, vanilla extract, and applesauce in a large bowl until smooth.
  2. Lightly coat a skillet with cooking spray and place over medium heat
  3. Pour about 1/4 cup of batter into the pan and lift off of burner. Swirl batter around in pan so that it spreads to the edges.
  4. Return to medium heat and let sit about 2 mins. or until the bottom gets slightly brown.
  5. Flip crepe, and remove when opposite side is browned.

I served these with raspberry jam and dark chocolate in the center, with whip cream, strawberries, and dark chocolate bits on top and a side of strawberry cheesecake frozen yogurt.

Does My Long Hair Make Me Look Dumb?

Here is a random question for you all…Does long hair make a lady seem less intelligent?

I heard on the radio this morning that some study says it does indeed make women come across “less smart” if they have long hair. I am a bit offended as I’ve let my hair grow out in the last few months. Now obviously, hair length has nothing to do with someone’s intelligence, but how they “appear” to others, that is interesting. I know that a few years ago when I cut my hair shorter (too short for my liking) a coworker told me it was a good time to ask for a raise! I never did. Maybe I should have tried it. So should I cut my hair? Na! I’ll just stick with the long, ‘unintelligent’ look for now! 😉

Storms

Really?  Now bagel Friday has turn into bagel and salami Friday???  Dang. No bagel/salami sandwich for me!  I will try to be happy with my cottage cheese and apples.  (Not that I don’t like my cottage cheese and apples;  it’s my favorite snack!  But when you eat it every day… sometimes you just want that bagel!) 😉

AND Vitam Water because it feels like I am getting a cold for the MILLIONTH time this season!

Do you guys notice, when you are working out harder, your immunity goes down?  I don’t know what it is.  It seems I’ve been constantly sick this winter and it hasn’t even been that cold.  Maybe it is because I’ve been watching little ones every week and we all know how they carry the sicko germs!

STORMS

There were some serious storms in the area here last night.  When I got done training, I looked at my phone and it was blown up with messages asking where I was, telling me to drive north, be prepared to take cover.  It was a little freaky kowing that a couple of tornados had already touched down.  When I got to where I was going, I saw on the news the devestation!  Houses were demolished, cars flipped, neighborhoods destroyed.  The miracle of the story is that no one was hurt.  No one was killed.  Simply amazing when you see all of the pictures of homes completely flattened.

It got me thinking, I need to be prepared and have a “game plan” of what I would do in a tornado.  I don’t have a lot of options of what are deemed “safe places,” so I will have to figure something out.  It has been unseasonably warm for March (I am not complaining), and I’m willing to bet more of these vicious storms could be coming!
